Plant-based sparkling from Jämtland

Birch sap is first used to produce a still wine fermented to an alcohol content of 11%. This is done at low temperatures with a specially cultivated yeast that delivers precisely the desired result for the wine. Birch sap is independent and more challenging to control than grape juice.

The still wine is bottled, initiating the second fermentation. The wine rests on its lees during this time. Pressure increases, and delicate natural bubbles form in the bottle. Over this period, the flavor also develops, giving our Sav™ Sparkling products their entirely unique character profiles. We offer three different variants of bubbles. Learn more on our product page.

A process on nature's terms

Producing Sav™ products is an original process guided by the nature. The heart of our products is birch sap. Birch sap is harvested in spring when the frost leaves the ground and the sap rises. The timing depends on the weather, ranging from early April to mid-May. Usually, we have three to four weeks to collect the amount of birch sap we need.

Our raw material suppliers are the birch trees

Each tree is carefully inspected and must be at least 30 years old. The tapped trees should not be located too close to roads, which can carry pollutants.

The historical use of the land is investigated very thoroughly. This is to avoid the uptake of unwanted substances and materials from previous industrial and other activities. Birch trees should also not grow in difficult terrain. It is necessary to be able to transport the heavy containers weighing 25 – 30 kg to the production facility. Every container that arrives is thoroughly checked to ensure the quality of the birch sap.
